Clean Eating Chicken (or steak) Fajitas

This recipe is from last week’s WIAW and it is super easy. Ingredients: 2-3 chicken breasts cubed 1 onion chopped 1 pepper chopped 1 container of rice (I used Spanish) 1 container of low sodium black beans Low sodium chicken broth Directions: Cook the rice according to package – I used 1/2 water and 1/2 chicken broth for the liquid In a large skillet sautéed onions and peppers until almost cooked Add in enough chicken brother to cover the bottom of the pan and cook chicken on a simmer covered Add seasonings of choice – I used pepper, red pepper flakes and taco seasoning (prior to covering) When chicken is cooked, add cooked rice and black beans to...

WIAW (a LOT of food)

So for today’s WIAW I am showing you what I am eating (ish) for the next  a while.   Breakfast will be either 4 egg whites and one whole egg or 6 egg whites, scrambled with veggies and 1/2 cup oatmeal (measured dry). Mid morning snack will be 1 cup greek yogurt with 3/4 cup granola and .5 oz almonds. Lunch –  6oz protein, today I did mini turkey burgers – new recipe below  and I have 3/4 cup of my quinoa salad. LiveFit Trainer Day 9

So because I am adding an extra day of legs in at the beginning of Weeks 1 & 2 (yesterday I did legs), today is technically Day 9 for me on the trainer even though I did the workout from Day 8. Sorry if it’s confusing at all. It won’t be once I get past this week because I won’t have to add in the extra day. I felt like crap yesterday so I slept in this morning but I made sure to pack all my stuff for the gym to go right after school. mini apple turkey burgers

Last night I made mini versions of my favorite turkey burgers, mostly because the mini ones require less of my time in the cooking process. (don’t mind the burnt pan, it has gotten ALOT of use) Ingredients: 1 package lean ground turkey (mine was 93/7 from Costco and 18oz) 1/4 large onion chopped 1/4 gala apple chopped 2 cloves garlic chopped 1/2 tbsp evoo 1/4 teaspoon all spice 1/4 teaspoon nutmeg Directions: Preheat oven to 350. Mix all ingredients in large bowl. Form into golf size balls. Place onto non-stick cookie sheet (or sheet sprayed with evoo). I like using a cookie sheet instead of mini muffin tins for these because then the fat can cook off. Bake for 40...

Jamie Eason has a great meatloaf muffin recipe but I wanted to do it a little differently so I played around today and this is what I came up with: Ingredients: 1 package lean ground turkey 1 small onion 1 yellow squash 3 garlic cloves 1 piece whole wheat bread 3 egg whites 2 tbsp mixed seasoning (no salt) 1/4 tsp chili powder a few shakes of pepper Sauce* Mix equal parts hot sauce of your choice – I used Arizona Gunslinger and worcestershire Directions: Preheat oven to 350.
