I’m so sorry I am a week late on sharing this with you guys but I have literally been either studying for finals {or daydreaming about the wedding}. Today I made this dish directly from The Eat Clean Diet Vegetarian Book which you can find here. I got mine in the mail and LOVE it. I cannot believe how many recipes there are and how awesomely they are labeled. You can omit the fish to make this vegetarian but I like fish so I kept it in. I did make a few other mods which I have noted in the recipe due to what I had in the house because running our to the grocery store was not happening today. Tri-Color Farfalle with Tuna, Spinach and Artichoke Hearts Farfalle, or...
Read MoreI have written before about how I like to prep out food for the week on Sundays and that was definitely my day yesterday – mixed with lots of studying. I knew the Fatkid was getting home around 8 so I wanted to be mostly done with cooking by then. But that never happens and I wasn’t done until around 9:30 – hence the next day post. Sorry Before I get to food I had to share this picture of our bug Tyson – he is the cutest thing ever and John felt bad he stepped on him so he let him lick his Coldstone container. So – yesterday I made all of the following: Stuffed chicken with: spinach, onion, mushroom, 1/2 piece Laughing Cow Lite...
Read MoreI am solo for dinner tonight the Fatkid went to see his new baby niece and I have to study for my summer school finals so I stayed home with Havoc and Tyson (he took Emma). Trying to make the best of being along, I made something I wanted to make for myself before I made for the Fatkid, for the sole reason that he is picky. Especially when it comes to fish. He can’t even smell it – which is why I basically only cook tilapia and usually it is hidden in something (stuffed peppers). I made a clean fried tilapia tonight and I think it will pass his test when he gets home. It took me 10 minutes from start to finish. Ingredients: 1 tilapia filet, 5oz (I buy...

Quick post: I made John an amaaazing smoothie tonight when he got home from work – I love peanut butter. 1/2 cup crushed ice 1/2 cup almond milk 1 scoop big man protein 1/2 banana chopped 1 tbsp all natural peanut butter 1 tbsp ground flaxseed YUMMY!! I tried Hake tonight instead of tilapia, just baked in lemon and grapefruit juice…have to say I don’t like it nearly as much as tilapia – bummer. back to...
Read MoreI made a different version of my original stuffed peppers from a few weeks ago. This time I catered the fillings to what we both felt like eating. John wanted the clean slow cooker chicken for his meat and I sauteed a tilapia with lemon juice for me. Brown rice for both of us. Two peppers – I ended up using my stuffing for two smaller ones (one for my lunch tomorrow) but his just got filled to the brim. Sauteed asparagus, zucchini (for both), yellow pepper for me. Just lemon juice, pepper and rice wine vinegar. Mushrooms – yuck – for the fatkid. I’m sorry but I just cannot make myself like these. His filling got feta cheese mixed into...
Read MoreFirst day back at school after spring break and I made it through. I am really sticking to my Eat Clean Diet* from here on out so I started my day out with my every day oatmeal and added chia seeds this time. Then I packed my cooler for the day: Morning Snack: Apple and 1 tbsp of peanut butter Lunch: Turkey chili and 1/2 flaxseed flatbread Afternoon Snack: 2 tbsp roasted tomato hummus and cucumber slices - I didn’t end up needing the banana or grapes And once I got home after my first kick butt workout of the week (twice this week is one of my goals) I made dinner. Dinner: Baked tilapia with fresh squeezed orange and lemon juice, brown rice,...
Read MoreI love Costco, and I am not afraid to admit it. I swear every time I go there I find something new and amazing. Plus, who doesn’t love free samples?? These are a few of my favorite Costco finds: Flat bread with flaxseed – I cut these in halves to make chicken tacos and fourths for a snack with my lunch. So good! Tortilla Crusted Tilapia – my mom told me about these and they are amazing and super quick to make for dinner! I also take them cold for lunch too. Organic Low Fat Burritos – these are simply, just beans, cheese and rice. Top it off with hot sauce and its perfect for when I’m craving Mexican food. Feta Cheese – this is the...
