This is seriously one of the easiest recipes I have made and basically came out of necessity because the Fatkid and I are flat out sick of chicken. I made mine Paleo and his traditional so I’ll post both options. Ingredients: 4-5 boneless, skinless chicken breasts Sautéed veggies of your choice Almond meal or traditional bread crumbs (bread crumbs are not Paleo but almond meal is) Laughing cow skinny Swiss wedges (optional -  not technically Paleo) No salt seasoning – any brand Directions: It is super important to flatten the chicken because you will be rolling it. This recipe is from last week’s WIAW and it is super easy. So my eats have been all over the place lately, mostly because I am getting back into a regular routine after finishing finals. That’s right, I AM DONE WITH LAW SCHOOL FINALS!! I don’t have any finals for my classes next semester and I am so excited that my next test I take will be the Bar exam. Wedding Updates and BBQ Chicken

Warning! This is not a ‘clean’ recipe but the Fatkid is obsessed with it so I thought I would share it with you guys in case not everyone in your family eats clean all the time. Put 3-4 chicken breasts in the slow cooker – I use frozen boneless, skinless. Cut up one onion and put in as well. Mix together: 1/2 cup zesty italian dressing 1/2 cup – 1 cup barbecue sauce 1-2 tbsp brown sugar Pour over the chicken and cook on low for 6-8 hours, until chicken shreds apart easy. Done! So this recipe has been waiting to be shared for literally months. It was incredibly easy and the Fatkid loved it. So this is kind of two recipes in one. I got this idea from Natalie Hodson and her rosemary chicken recipe. But I did tweak it a little based on what I had in the house and what we like. Recipe #1 Grilled Artichoke This is insanely easy and so good. I have loved artichoke since I was a kid and my mom always used to make it, but this was my first time cooking it. This is post boil – pre grill. 1. Fill a large pan with a few inches of water and juice from 1 lemon. 2. Put whole artichokes in and bring to a boil. 3. Cover and cook for 20 minutes. I am a mustard fanatic so I’m surprised I haven’t thought of this before. This is a super easy chicken recipe that I threw in the slow cooker two nights ago because I was still feeling sick and did not want to spend more time than necessary any time cooking. I would use 1/2 tbsp to 1 tbsp of dijon mustard per chicken breast. I used 2 tbsp for 3 breasts and wish I used a little more. Whisk the mustard with just enough lemon juice that you will be able to pour it. Put the chicken breasts in the slow cooker, pepper them and then pour dijon/lemon mix over them and cook overnight. I’m not sure if you all know that I am half mexican but I am and I loooooove mexican food. My favorites are probably enchiladas, tacos and tostadas. I worked at a really popular mexican restaurant and bar for 4 1/2 years and to date their food is still my favorite. The red sauce for their enchiladas is my favorite.
