A few random things….I discovered last time I made an oatmeal bake and forgot to share that a great way to keep it from getting dry during the week is to store it in a large plastic bag with a paper towel in it when you first put it in the fridge. That way as the bake cools the paper absorbs the moisture and keeps the bake soft without it getting the condensation on it directly. This was the first class I was able to make it to all week so I was really glad about that.
