I hope you all enjoyed your weekend I know we did! Saturday I did legs and while it might not seem like a lot – it kills! Then we went for a hike on Camelback mountain (we always do Echo Canyon which is the ‘harder’ side) the weather was soooo nice – I am thrilled it is finally below 100! So last week I bought pork (besides bacon) for the first time and make the slow cooker bar-b-que pork recipe I posted. I also made this sweet and sour pork recipe from Clean Eating. I have to say because I am not a fan of soy sauce, this was not my favorite, but it was a big hit with the Fatkid. He had it over brown rice for dinner. It was super easy and quick to make and he liked it cold for lunch the next day too. Good morning everyone!! I got some great news last night so today is definitely a great one. Lets start with goals: I am thankful…that taking better care of myself reflected in my school progress second semester. (I realize this might sound a little selfish but hear me out). That I was taught healthy eating at a young age so that I wasn’t trying to start from scratch when I really decided to commit to it. Keeping up with my goals for the week: I am thankful for: my grandma and grandpa who never took anything for granted and even without her my grandpa is still go grateful for everything he has in his life. the opportunities I have been able to have, like going back to law school. my parents – for teaching me too many lessons to list I also got up early and did both the Amazing Abs and the Burpees are Forever workouts from BodyRockTV. Last night after lifting back and shoulders I decided to do some cardio and randomly had alot of extra energy. I have been trying to do the treadmill lately because I never used to run/jog, etc. and I feel like it is good to try something new for a while. Because of my knee I almost never run outside and I also cannot run for long period of time. This interval routine is perfect because it works my legs and gets my heart rate up but still feels really do-able for me. I actually enjoyed it – weird. Today my focus was back and shoulders, I usually only lift those once a week because they get a pretty good workout during yoga and as I mentioned before legs are really what I’m trying to build up.
