Today after my workout I wanted to use the last the we had in the fridge so I made a watermelon/banana protein shake and some egg whites with onion and bell peppers. Read MoreToday I made protein “crepes” for breakfast. It is basically the same recipe as my low-carb protein pancakes I have been making but with more almond milk. I mixed:1 scoop PP1 tbsp ground flaxseed3-4 tbsp almond milk (unsweetened) Add enough almond milk that the conistancy is more liquid than a pancake would be. I poured it into a larger pan than normal and cooked it on medium for about 3 minutes. Then I topped it with 1 tbsp unsweetened almond butter and 1/2 banana and fold over. Yummy!! The almond butter melted because I put it on when the pan was still hot so it was the perfect combination of a cold banana and warm butter....

First, I am officially done with my first year of law school!! This is just amazing because I survived it without (literally) having a breakdown. Finals were hard but I managed to keep the balance I had between school and healthy living probably 95% of the time. I kept up with all my workouts and only stress ate pounds of sugar once or twice – which is a HUGE improvement from last semester. A few random things….I discovered last time I made an oatmeal bake and forgot to share that a great way to keep it from getting dry during the week is to store it in a large plastic bag with a paper towel in it when you first put it in the fridge. That way as the bake cools the paper absorbs the moisture and keeps the bake soft without it getting the condensation on it directly.
