This is seriously one of the easiest recipes I have made and basically came out of necessity because the Fatkid and I are flat out sick of chicken. I made mine Paleo and his traditional so I’ll post both options. Ingredients: 4-5 boneless, skinless chicken breasts Sautéed veggies of your choice Almond meal or traditional bread crumbs (bread crumbs are not Paleo but almond meal is) Laughing cow skinny Swiss wedges (optional - not technically Paleo) No salt seasoning – any brand Directions: It is super important to flatten the chicken because you will be rolling it. You can either pound the chicken – which I hate doing. So instead I cut the chicken...
Read MoreThis recipe is from last week’s WIAW and it is super easy. Ingredients: 2-3 chicken breasts cubed 1 onion chopped 1 pepper chopped 1 container of rice (I used Spanish) 1 container of low sodium black beans Low sodium chicken broth Directions: Cook the rice according to package – I used 1/2 water and 1/2 chicken broth for the liquid In a large skillet sautéed onions and peppers until almost cooked Add in enough chicken brother to cover the bottom of the pan and cook chicken on a simmer covered Add seasonings of choice – I used pepper, red pepper flakes and taco seasoning (prior to covering) When chicken is cooked, add cooked rice and black beans to...
Read MoreSo my eats have been all over the place lately, mostly because I am getting back into a regular routine after finishing finals. That’s right, I AM DONE WITH LAW SCHOOL FINALS!! I don’t have any finals for my classes next semester and I am so excited that my next test I take will be the Bar exam. Now I am just going to work and get ready for all the fun wedding events coming up I got my dress on Monday and I am going to have my first fitting next month. And the bridal shower is in exactly one month so I am going to up my cardio and yoga and really clean up my food. I had quite a few indulgences during finals. That being said, here are some of my eats...
Read MoreSo this recipe has been waiting to be shared for literally months. It was incredibly easy and the Fatkid loved it. He is Italian though so anything with pasta and red sauce it an easy win with him. Ingredients: 1 large bag of fresh spinach 3-4 large boneless skinless chicken breasts (sliced in thin strips) 9-12 whole wheat lasagna noodles 1 container of ricotta cheese – you can do a lot of different things for this, use a smaller container, use low-fat, non-fat, etc. or even use a different cheese. 24oz. of pasta sauce (you can use your own favorite or try my homemade pasta sauce - just double the recipe) Directions: Place 1/3 the noodles on the...
Read MoreFirst let me preface this with the fact that I have tried a hundred dozen different ways to get the elusive ‘perfect’ hard boiled egg and they are either undercooked – which grosses me out. OR they are so hard to peel the Fatkid cries about it and makes me do it for him – plus you always lose a ton of the white when they are hard to peel. So I pinned this the other day and decided to try it last night. BAKED EGGS! Who knew?? Seriously though – who knew this and hadn’t told me yet??? I put my eggs in a muffin tin and preheat the oven to 325. I baked them for 30 minutes and then took one out, cooled it in water really quick and...
Read MoreSo this is kind of two recipes in one. I got this idea from Natalie Hodson and her rosemary chicken recipe. But I did tweak it a little based on what I had in the house and what we like. Recipe #1 Grilled Artichoke This is insanely easy and so good. I have loved artichoke since I was a kid and my mom always used to make it, but this was my first time cooking it. This is post boil – pre grill. 1. Fill a large pan with a few inches of water and juice from 1 lemon. 2. Put whole artichokes in and bring to a boil. 3. Cover and cook for 20 minutes. Pre-heat grill to medium. 4. Take the artichokes out and let them cool. Then cut them in half length wise and scoop out...
Read MoreSo I feel like every time I write I am apologizing for being MIA and at the risk of sounding like a broken record…I’m sorry I’ve been neglecting the blog lately. Summer school started last week and I am splitting my time between two summer internships and I am trying to get the main vendors booked for the wedding (more on that tomorrow). But I did ask for a main ingredient suggestion and I got quite a few requests for shrimp. I love seafood but I don’t cook it often because it is so expensive to get it fresh in Arizona and I don’t really like frozen shrimp. I decided to bite the bullet for you guys and bought a package of frozen, raw,...
Read MoreI am a mustard fanatic so I’m surprised I haven’t thought of this before. This is a super easy chicken recipe that I threw in the slow cooker two nights ago because I was still feeling sick and did not want to spend more time than necessary any time cooking. I would use 1/2 tbsp to 1 tbsp of dijon mustard per chicken breast. I used 2 tbsp for 3 breasts and wish I used a little more. Whisk the mustard with just enough lemon juice that you will be able to pour it. Put the chicken breasts in the slow cooker, pepper them and then pour dijon/lemon mix over them and cook overnight. I ended it shredding it after the pic just because it’s easier to pack. Do...
Read MoreI’m so sorry I am a week late on sharing this with you guys but I have literally been either studying for finals {or daydreaming about the wedding}. Today I made this dish directly from The Eat Clean Diet Vegetarian Book which you can find here. I got mine in the mail and LOVE it. I cannot believe how many recipes there are and how awesomely they are labeled. You can omit the fish to make this vegetarian but I like fish so I kept it in. I did make a few other mods which I have noted in the recipe due to what I had in the house because running our to the grocery store was not happening today. Tri-Color Farfalle with Tuna, Spinach and Artichoke Hearts Farfalle, or...
Read MoreSo last week I bought pork (besides bacon) for the first time and make the slow cooker bar-b-que pork recipe I posted. I also made this sweet and sour pork recipe from Clean Eating. I have to say because I am not a fan of soy sauce, this was not my favorite, but it was a big hit with the Fatkid. He had it over brown rice for dinner. It was super easy and quick to make and he liked it cold for lunch the next day too. Ingredients: 1 lb top pork loin cut into squares 1 sweet onion sliced in rounds 1 tbsp evoo Sauce: 2 tbsp Braggs’s Amino Acids 2 small oranges juiced and zested The original recipe also had: 1 green apple diced 1 lb sweet potato diced But I...
