Leg Workout and Paleo Almond Butter Banana Muffins

I hope you all enjoyed your weekend :) I know we did! Saturday I did legs and while it might not seem like a lot – it kills!

Then we went for a hike on Camelback mountain (we always do Echo Canyon which is the ‘harder’ side) the weather was soooo nice – I am thrilled it is finally below 100!

Yesterday during football I wanted to try to make some paleo protein muffins and I have to say I think these were a success. BUT BE WARNED: I do not like sweeteners so if you usually cook with some form of sweetener (or vanilla extract) I would add it because you might find this to be not sweet enough for you.

Paleo Almond Butter Banana Protein Muffins | Fit Foodies. Healthy Life.

Ingredients:

  • 2 ripe mashed bananas
  • 3 tbsp almond butter
  • 6 scoops vanilla protein powder
  • 1/2 cup almond meal
  • 1/2 cup greek yogurt
  • 3 tbsp ground flaxseed
  • 1/2 cup liquid (I was out of almond milk so I used water)
  • 1/2 tsp baking soda
  • a few shakes of cinnamon

Direction:

  • Mix everything together and put in a muffin tin (3/4 of way).
  • Bake at 325 for 25 minutes or until done.

Here are the stats for 2 muffins (I made 12, so 6 servings)

And I made some grilled chicken for lunch the next few days. It is a super easy marinade of a few tbsp of dijon mustard and 1/4 cup of lemon juice. Then right before you grill just put on your favorite no-salt seasoning.

Cardio yesterday was just wind sprints for 15 minutes at 6.0 incline and 8.5 MPH. I am loving doing sprints on an incline and cannot believe how much harder it makes it. I do 30 seconds on and 30 seconds off.

  1. I love wind sprints too – for your “off” part – how fast/slow do you usually go? I find it takes my treadmill about 10 sec to get from 4mph up to 8.5 (or back down) so I usually do 1 min on/off because otherwise it feels like I’m constantly playing with the controls.

    The muffins look amazing! I just got a new jar of almond butter….

    • I go for 30 seconds on (8.5) and then jump off for 30 seconds and then repeat. So I am either sprinting or standing – no in between :)

  6. Monika, thanks for all the great recipes. I’m just wondering what type of protein powder you use because I have tried several of the protein bars/muffins and gotten terrible results. I think it’s my protein powder. I’m using VegaSport. Any suggestions for a replacement would be appreciated! Thanks! :)

    • Hi Jo – I use Isopure All Natural Unflavored or Vanilla. It bakes great!

  7. Hi! I made the almond butter muffins today and the mini turkey burgers :) both were a success! My muffins are a little on the dry side but great flavor! Thanks for recipes and providing the nutrient info!

  8. So 1 scoop of my protein powder would be 1/4 cup…is it correct this recipe calls for 1 1/2 cup of protein powder?
