First let me preface this with the fact that I have tried a hundred dozen different ways to get the elusive ‘perfect’ hard boiled egg and they are either undercooked – which grosses me out. OR they are so hard to peel the Fatkid cries about it and makes me do it for him – plus you always lose a ton of the white when they are hard to peel.
So I pinned this the other day and decided to try it last night. BAKED EGGS! Who knew?? Seriously though – who knew this and hadn’t told me yet???

I put my eggs in a muffin tin and preheat the oven to 325. I baked them for 30 minutes and then took one out, cooled it in water really quick and tested it. The yolk was still a little underdone (for me) so I put them back in for 5 more minutes – 35 total. I would suggest starting at 25 minutes and then cooling one off and testing it.
Once they are done – take them out and put them in a bowl of really cold water – I put ice in mine. This stops them from over cooking and helps them peel better.
The Fatkid tried one right away and it. was. perfect! Yay
it peeled super easy and although there are little brown spots on the white from baking (don’t be surprised by this) they tasted perfect.
I also made some more balsamic dijon chicken with broccoli. This time I only used 1 tbsp coconut oil, 1/2 cup balsamic, 2 heaping tbsp of dijon mustard, basil, thyme and pepper. I didn’t feel like chopping anything and it turned out awesome again.

I mixed it with this awesome stuff I just tried for the first time – delis! And it only takes 90 minutes seconds – oops! – in the microwave – I was I super lazy exhausted last night and did not want to be up all night cooking.

And some quinoa bakes! It’s been a while since I have made these but I am getting sick of shakes post workout and these are the perfect combo of carbs and protein. This is obv. pre oven.

I have been not into meat as my protein at all lately – I think it’s because it’s 110 every day right now but for whatever reason I can have one or two bites and then want to yack.
So instead I made egg salad and tuna salad today. I also brought the balsamic chicken which I’m hoping will be okay because the balsamic flavor is so yummy I won’t notice that it’s chicken. I put spinach, baby tomatoes, cucumber and carrots in one large tupperware to munch on and brought an avocado and an apple too.
**Addition – for my egg salad I just use dijon mustard and pepper – for the tuna I use the same and add a lot of lemon juice.**

I have been making hard boiled eggs a lot lately and half the time they come our underdone and they are garbage! I am a great cook, but for some reason no luck with hardboiled eggs! I never heard of this before so thank you!!!
baked eggs?? who woulda thunk it! lol. do you like poached? i finally just perfected the art of poached eggs (surprisingly difficult), and they are so tasty when done right!

did it take 90 seconds or 90 minutes?? And the chicken looks great! I think I’ll try that with the broccoli because the artichokes look very labor intensive! LOL Did you grill the broccoli before baking it with the chicken?

the artichoke did take a while but it was so worth it! You can always just buy the heart in a can too. I actually used frozen broccoli and just threw it in there.
I’ve heard about baking eggs like that but I’ve got a good system going with the stove. Good to know it works though.
I have found that eggs are only hard to peel if they are fresh bought eggs from the store. There is something about keeping them in the fridge for a week and then boiling them that makes them peel easy. So use old eggs if you are boiling them.

It’s true – fresh eggs hardboiled will be hard to peel. Use slightly older eggs and they will peel easily every time!
We eat vegan at my house, my favorites are: roasted chickpeas on spinach with roasted yams; gluten free whole wheat spagetti with “bean balls”; black bean/ quinoa patties with side of veggies; quinoa, avocado, lime salad, and ooodles more. Check out “Oh She Glows” heaps of vegan / veggie ideas.
I also tried this same egg-baking idea with egg whites and spinach and salsa in the muffin pan… a mini-omelet! They are the perfect size for containers to have for lunch or snack.
