no bake peanut butter bites

The Fatkid has be asking and asking for the peanut butter bites I made when I entered the contest from Smart Food and Fit and made her No Bake Peanut Butter Balls.

Then the boys at the gym that he works with have been asking me for weeks to make them something so I decided to make those again and bring them in – everyone is happy. I modified her original recipe a bit and this is what I did for this batch:

Ingredient:

  • 1 cup peanut butter (or any nut butter)
  • 1 cup old fashioned oats
  • 1/3 cup ground flaxseed (or whole or chia or whatever seed you like)
  • 1/2 cup apple sauce
  • 1/4 cup honey
  • 1/4 cup dried cranberries (optional)
  • 1/4 cup dark cocoa chips (optional)

** You can also add protein powder but as much I love the gym boys – I don’t love them quite enough to share my Isopure :)

Directions:

  • Mix everything together
  • Use an ice cream scooper to form balls – I did it with my hands the first time and it was messy
  • Put in plate on a fridge to chill for an hour or so

I mentioned before that these are a little too high in sugar for my delicateness but they are great for the boys and for an occasional treat :)

Today my favorite thing at the gym was walking lunges. I made sure to take extra long steps to really get my glutes. The longer the steps the more focus on your glutes :) and they are sore already. Yay!

And for dinner the Fatkid made us some yummy omelletes – if you notice my eggs are always a scramble because I pretty much fail when I try to make omelettes.

His is stuffed with onions, peppers, turkey and cheese of course :)

And mine had onions, peppers and jalepenos :)

 

I have been on a serious breakfast for dinner kick.

  1. Yay for omelete dinners!! That’s what I had last night too. I love mine stuffed to the max with veggies (spinach, onions, mushrooms, tomatoes, peppers, asparagus) pretty much whatever I have on hand. Oh and of course with salsa on top! Oh oh and some avocado.

  3. Nothing is better then breakfast for dinner! Omletes are the greatest! I have a great breakfast pancake that I make. (only in the morning though :(
    1/2 cup oats
    3/4 cup egg whits
    1/4 cup protein powder (chocolate my fave, my fiance likes vanilla)
    1/4 of berries
    sprinkle with cinnamon
    *mix together in a bowl, put all in the frying pan and cook like a pancake. Flip once and you are good to go!

    Wespread 1 table spoon of natural peanut butter on top delish!

  4. Thanks Monika for the mention. I like your version, less sugar and full of great clean eating ingredients. I love have breakfast for dinner. Usually it’s a veggie omlette or just some oatmeal with fresh fruit. Tonight I posted overnight oats. Are you entering a bikini contest? I wish I had the dedication to train like I did last year but need to find my motivation. Keep up the great posts on your awesome workouts, it’s very motivating! :)

    • Thanks Lisa! I have tried overnight oats a few times and I like them but never think about making them :) and yes I am entering a bikini contest in July. I am terrified but want to do it at least once :)
