I’m so sorry I am a week late on sharing this with you guys but I have literally been either studying for finals {or daydreaming about the wedding}. Today I made this dish directly from The Eat Clean Diet Vegetarian Book which you can find here. I got mine in the mail and LOVE it. I cannot believe how many recipes there are and how awesomely they are labeled. You can omit the fish to make this vegetarian but I like fish so I kept it in. I did make a few other mods which I have noted in the recipe due to what I had in the house because running our to the grocery store was not happening today. Hi everyone! I am working a fundraiser today from 10:30am to 9:00pm (outside!) so I thought I would share my cooler really quick: I have two containers of chicken (topped with jalepeno salsa) carrots, quinoa, greek yogurt (with chia and flaxseed), rice cakes and almond butter. I am also going to pick up a Starbuck’s protein plate and have that (sans the bread thingy) for my afternoon snack because I didn’t have any fruit in the house and I think I will need those natural sugars around 4. The Fatkid has be asking and asking for the peanut butter bites I made when I entered the contest from Smart Food and Fit and made her No Bake Peanut Butter Balls. Then the boys at the gym that he works with have been asking me for weeks to make them something so I decided to make those again and bring them in – everyone is happy. So for today’s WIAW I am showing you what I am eating (ish) for the next  a while.   Breakfast will be either 4 egg whites and one whole egg or 6 egg whites, scrambled with veggies and 1/2 cup oatmeal (measured dry). Mid morning snack will be 1 cup greek yogurt with 3/4 cup granola and .5 oz almonds. Lunch –  6oz protein, today I did mini turkey burgers – new recipe below  and I have 3/4 cup of my quinoa salad. first day of competition prep!

Alright! Today is the first day of my competition prep and I am super excited. I was going to start yesterday but I got a 24 hour bug so I waited until today. Real quick though we did have a MAJOR cheat this weekend to celebrate the end of the LiveFit and the beginning of this We went to one of our favorite restaurants that we don’t eat at that often - because our favorite thing there is the most amazing fried chicken with honey and bisquits. So I have been chatting with Jeff over at WeightTraining.com via Twitter and he had some extra shirts and was nice enough to share with me.
