‘mashed potatoes ‘ (cauliflower)

So I had to go to Walmart today to get more tupperware and found two amazing little gadgets for under $2! The little black ones are grippers for hot plates and baking sheets – amazing because I burn myself at least once a week. The little orange one is a pot and pan scraper – I used this tonight and it works like magic! Both are dishwasher safe too :) and also featured is my food scale. I think I got it at Target and it’s pretty amazing.

So I thought I would be kind of surprising people with this post but apparently I am the only person in the world (or in a large area) that has not tried to mash/puree cauliflower. Since I have never cooked it before, this isn’t that surprising (yes I have eaten it before). I was pleasantly surprised with how quick it was to make and that it pasted the fatkid test. John was literally walking in the door as I was finishing it so I had him taste it and his first words were “mashed potatoes?”  I literally danced around the kitchen because it is kind of a nightmare trying to get him to eat veggies on a regular basis.

Ingredients:

  • One head of cauliflower
  • 2 cups almond milk (or less since half of mine boiled over – oops, and I didn’t use the leftover stock)
  • pepper and granulated garlic (or spices of your choice)

Directions:

  • Cut cauliflower into quarters and break into florets
  • Put in pan with almond milk and bring to simmer (not boil – I was not paying very good attention)
  • Cook until soft and then drain saving milk stock
  • Puree in blender (add milk stock if needed – but it wasn’t)
  • Add spices

It’s that easy. I added black pepper and granulated garlic to mine.

I was a little disappointed that it didn’t make that much though – next time I will have to do two.
