stuffed peppers and spring break!

So I am officially on spring break this week which has been nice but not as productive as I was planning on being. One of the things I want to start doing is weekly goals – normally I will share on Sundays but I forgot this week so here they are:

Try three new recipes, one down two to go
Gym or yoga every day, so far successful at this
Start and keep using the fitness journal I bought, not so great at this so far

I took a day trip on Monday and spent some time with my parents and little brother which was really nice. Then yesterday I went on the first of (hopefully!) many lake trips of the year – the weather was so gorgeous even though the water was still freezing! When I got home I decided to be ambitious and try making stuffed peppers which I have been wanting to do for while. The fatkid has told me before he doesn’t like bell peppers so I was going to make him something else and make the peppers for my friend Holly and I. Lo and behold – he comes into the kitchen telling my he looooooves stuffed peppers so Holly and I had to share one.

I have had the fortune of making some really great friends in law school and one of them – Kate – told me how she makes her boyfriend stuffed peppers with ground turkey so that was the inspiration for these. I didn’t use a recipe but just grabbed what I had in the kitchen and pantry – they were delicious if I do say so myself. Definitely a new staple in our household as they were quick and easy to make.




Ingredients:
ground turkey, about a 1/3 of the package
plain couscous, one package
1/2 onion, chopped
1-2 cloves of garlic, minced
1/2 cucumber, chopped
handful of baby carrots, chopped
black and pinto beans, already cooked
feta cheese
note: I had extra couscous and turkey stuffing left over from this – it probably would have easily been enough for four peppers

Directions:
Preheat oven to 350 degrees.
Cut tops off peppers.

Put onions, garlic and turkey in a pan and cook until turkey is brown.

Mix in cucumber, carrots and beans.
Stuff turkey mixture in the bottom of peppers, then stuff in couscous and finish with another layer of turkey mixture.
Put peppers on a cooking sheet and in the oven for 10 minutes.
Take them out and top with feta cheese.
Put them back in oven for 2 more minutes so the feta softens.
