protein oatmeal banana bake – YUM!

I eat oatmeal with vanilla protein powder basically every day and I am getting slightly sick of it….plus I have been running slightly late recently. My point it that I saw this oatmeal bake on a bicycle built for Two and also on Kath Eats Real Food and wanted to try it. The only problem I saw was that the bake didn’t have my morning protein in it. Soo…I modified it a little and this is what I came up with:

Clearly I HAD to use these today…

Ingredients:
2 cups of rolled oats
4 scoops of vanilla whey protein powder
2 tbs ground flaxseed
1 tbs whole flaxseed
1 tbs chia seed
1 tsp baking soda – was supposed to be power – oops!
1/4 tsp salt
1 tsp cinnamon
1 egg
1.5 cups fat free milk
1 mashed banana
4 sliced bananas

Directions:
Mix together wet ingredients – except sliced banana.
Mix together dry ingredients.
Line the bottom of a round baking pan with the sliced banana – this took me about 3 of the 4.
-I used a pie pan sprayed with oil-olive cooking spray.
Mix dry ingredients into wet ingredients – make sure it is distributed evenly.
Pour mixture on top the the layer of sliced bananas.
Cover with remaining sliced banana.

I used the baking recommended by Kath Eats Real Food:
26 minutes at 375 and then broil for 3-4 minutes. I should have skipped the broil because it singed the top of mine but it was still a-maaa-zing!! This will be a new breakfast and snack regular.

Nutrients for 1 slice (I cut the pie into 4 large pieces):

479 calories
7.65 (g) fat
68.5 (g) carbs
23.5 (g) sugar – none added
39 (g) protein

  2. Hi Mariah – thats actually why I made it :)

    I make it Sunday night usually and then cut it into 4-8 pieces and refrigerate. Then throughout the week I just pull a piece out and heat up in the microwave or oven for breakfast. I even like it cold but I don't know how the kids would feel about it. Also try the apple – I think it's actually my favorite.

  6. Just made this – very tasty! It's the perfect amount of sweetness. I made a few adjustments based on what we have in the house – chocolate protein powder, flax oil and wheat germ instead of ground flax/seeds, no chia seeds, and unsweetened rice milk instead of cow's. I had to bake it much longer than 26 minutes – could be my oven. On the menu this week: your chili and tilapia stuffed peppers!

  7. So glad you liked it! I still haven't found an exact time that works perfectly every time – even changing the ingredients a little seems to mess with the time so let me know what works and doesn't :) hope you like the tilapia as well!
